Hello, hello!

I'm popping in this week to share my latest and greatest with you. First, let's talk Olive Oil Brownies AKA my most popular brownie recipe.

These fudgy brownies surprise in so many ways. Unlike most brownie recipes, they don't require a block of chocolate or any butter. Instead it's a quick mix recipe starting with olive oil.

It's my go-to recipe when I'm craving something chocolatey but I don't have any actual chocolate in the house.

Stir in a few pantry staples, like sugar, flour and cocoa powder and you have a rich chocolate brownie batter.

Once baked, these brownies are surprisingly fudgy and they stay moist and soft for days (thanks to the oil). Honestly, once you try making brownie this way, you might never go back.

If you use dairy-free chocolate chips, it's also a handy dairy-free dessert. No electric mixer needed.
