Cornflake Crunch + Bake My Vanilla Cake With Me 🎂

If you follow along on Instagram, you would have seen that I have been making these crunchy little morsels ALL WEEK LONG.

I just hit publish on my new 5 ingredient recipe for Cornflake Crunch. Soaked in honey, butter and brown sugar, these little golden flakes are then caramelised in the oven until they smell toasty.

This recipe was inspired by two things: America's Milk Bar Bakery and the delicious treats I grew up with in Australia called Honey Joys.

A few years ago, I attended a cooking class at Milk Bar Bakery in Los Angeles and I also had the pleasure of visiting Milk Bar Store in New York (the og). It was there I tried their famous soft serve which is served with - you guessed it - sweet, crunchy caramelised Cornflakes.

The Cornflake Crunch on her soft serve reminded me of a classic Honey Joy. Last year, I tested an elevated Honey Joy Slice recipe which can be found on page 145 of my new cookbook, Something Sweet.

So all that to say, I’ve now used that inspiration to create my own easy copycat recipe for Cornflake Crunch that you can make at home.

You can throw it into your favourite cookie dough, use it to decorate cakes, cupcakes or brownies, or scatter it over a bowl of vanilla ice cream. Trust me, you'll be making this over and over again.
