The Secret To A Really Good Vanilla Cake + Save The Date

hi there Reader

save the date

Hello, hello!

I've been baking up a storm this week and loving every minute of it. First it was a batch of Jam Drops, and then I tested a new recipe for Cheese Scones. I absolutely loved the result and can't wait to share the recipe with you soon!

Next, I made my favourite Vanilla Cake for an upcoming episode of my sweetest show on YouTube. I had completely forgotten how good that cake is. And it's all because of the reserve creaming method. Honestly, the texture is 👌🏻

You have been asking me for years to film longer videos showing you how to bake. So I'm jumping in my kitchen and finally getting started on it. I can't wait to share them with you in the coming weeks!

I'm also currently organising the launch for my new cookbook, Something Sweet. It'll be here in Melbourne - details to come!

SAVE THE DATE: July 2nd

I can't wait to see you there!

what you've been baking

"The cake turned out perfectly, I didn’t make any changes and I made it with my 2.5yo so its not tricky to make. Its chocolatey and moist, but not too rich. It was perfect paired with your chocolate ganache. This will be my new go to for birthdays 🎂." - Louise

L to R: Fresh berries, frozen berries and freeze-dried berries. The truth is, they all...

And it does NOT disappoint. Just like the ones I had in NZ, these small but tall scones are filled with flaky layers and feature a crispy cheesy top.
