Hello, hello!

Happy Easter to you! I, for one, am surprised that April has zoomed up on us which means we survived term one (phew), holidays are here and if you're anything like me, you're hiding Easter eggs around the house in preparation for the annual Easter egg hunt.

Whether you're celebrating with friends or family or just enjoying some hard earned time off this weekend, I hope you get a chance to bake bake bake.

Easter to me means Carrot Cake, bunny-shaped cookies, Coconut Cupcakes, anything lemon and anything with Easter eggs in or on it. I've already made a batch of my Mini Egg Cookies and now my kids and I are eyeing off my Easter Egg Brownies.

9 things to make this Easter

Here are nine of my most popular recipes to make this weekend, including my Carrot Cake, Sugar Cookies and Lemon Pound Cake. All three recipes also made it into my new cookbook, Something Sweet.

Carrot Cake

The easiest Carrot Cake recipe that's not dry, not stodgy but perfectly moist. Complete with a three ingredient maple cream cheese frosting.

Mini Egg Cookies

Thick, buttery cookies filled to the brim with crunchy Mini Egg Easter eggs and milk chocolate chips. Ready in 30 minutes.

Lemon Pound Cake

I call this the best Lemon Pound Cake I've had. I still stand by that. This one is so popular, it made it into my cookbook.

Cut-Out Sugar Cookies

These easy cut-out Sugar Cookies take minutes to make but you can cut them into any shape or size. Make bunny butt cookies, carrots or bunny ears.

Easter Egg Rocky Road

A simple 4-ingredient treat filled with Easter eggs, peanuts and marshmallows. You can use any Easter eggs you like!

Coconut Cake

One of my all-time favourite cakes, this Coconut Cake is the perfect showstopper for your Easter table. With coconut in the cake and the icing, it's coconut-delight!

Easter Brownies

Perfectly fudgy chocolate brownies topped with chocolate ganache icing and oodles of Easter chocolates. The perfect way to use up any leftover Easter eggs!

Blueberry Cookies

These soft and chewy cookies are filled with dried blueberries and white chocolate chips. So quick and easy! Add some lemon zest for a lemon twist.

Mini Egg Cheesecake

These creamy no bake cheesecake filled with Easter eggs and topped with whipped cream. It's fun-filled dessert if you want something light and sweet.
