It's February, which means love, Valentine's Day (and my wedding anniversary!) and chocolate. And I'm all for it.

And today's recipe is the perfect way to say I love you - to you, to your love or to ridiculously good desserts.

Introducing my TIRAMISU COOKIES.

Yes, I've taken all the wonderful things about this classic Italian dessert, and made it into cookie.

Unlike traditional tiramisu (which I'm also all for) which requires dunking, soaking and chilling, these cookies can be ready to eat in one hour.

ONE HOUR.

It begins with a soft and chewy chocolate chip cookie that's studded with espresso coffee powder. I know - we're winning already.

Then comes the creamy mascarpone frosting that tastes less than 10 minutes to make but tastes like a cloud - if clouds were made of soft Italian cheese.

Finished with a dusting of cocoa powder, these Tiramisu Cookies are soft, chewy, earthy, creamy and utterly moreish.

Make them today, tomorrow and every Val day going forth. I will be too! ❤️
