5 Lovely Loaf Cakes + The Recipe I Can't Seem To Crack

hi there Reader

from my kitchen

What a week it's been! After the success of my Whole Orange Cake, I went straight back into the kitchen for more recipe testing.

I've been working on a Cornflake Brownie recipe but so far it hasn't gone to plan. Despite trying different variations, I'm actually becoming more and more convinced that brownie and cornflakes don't necessarily belong together.

While both elements taste amazing on their own, together, the chocolate swallows up the honeyed Cornflakes every time. So I've decided to stop and rethink this one.

Some readers have suggested trying a blondie base or maybe even a cookie. If you have any ideas or suggestions, just hit reply!

Meanwhile this week, I've also made and enjoyed a batch of my no mixer Chocolate Chip Cookies and my soft chewy Gingerbread Cookies (no need to wait until Christmas to enjoy these!)

5 loaf cakes we're loving ❤️

Passionfruit Loaf

This is one of my most popular recipes of all time. It uses fresh passionfruit pulp to make the most tender and light loaf cake.

Coconut Loaf Cake

A dense but moist coconut pound cake topped with a zesty lime cream cheese frosting. This loaf cake is surprisingly good!

Chocolate Banana Bread

Soft and moist banana cake filled to the brim with milk chocolate chips. This chocolate cake is the perfect way to use up any leftover bananas!

Lemon Raspberry Loaf

An easy one bowl recipe, this lemon raspberry loaf comes together in just 15 minutes. It's made with oil but you can swap in butter if you prefer.

Whole Orange Cake

This simple orange cake is made using an entire orange (rind and all). Made in the food processor, it comes together in minutes but stays moist for days!

"It was AMAZING! They were my favourite cookies I ever tasted! Very easy too! I’m 11 and I didn’t need any help and it tasted like pro’s baked it! I highly recommend this recipe. Enjoy! And thanks Jess!" - Caroline

hi there Reader our new baking community is HERE ❤️ Every single day, readers email me or send me messages on Instagram and ask which recipe of mine they should try, or what brand of chocolate I use, or how they should store their leftovers. You send me photos of your bakes, cakes you made for birthdays, or cookies your made with their kids. And honestly, chatting with you is one of the best parts of my job. But DMs can get lost, and there's only one me. So I'm so excited to launch a new...

hi there Reader a new video for you ❤️ Whenever I develop a recipe, I feel like I have so much to say! I try to cram as much information as I can into the recipe post, but sometimes I just want to bake with you. So I've decided to do more long form videos where we can bake the recipe together and really get into the nitty gritty. You can see exactly how I'm making something, the techniques, the timings and we can chat along the way. So after filming how-to videos for my Jam Drop Biscuits and...

hi there Reader from my kitchen In between sniffles and coughs in my house, I've been enjoying some quick and easy bakes this week. I made another Whole Orange Cake - we cannot get enough of this one. And I love that it's made in the blender. The batter comes together in about 15 minutes. I also made another batch of my Cornflake Crunch, my Perfect Chocolate Slice and the Shortbread Cookies on page 42 of my new cookbook Something Sweet. In other exciting news, I'm also working on a new...
